Tortilla's Again - For My Band



After a really hectic weekend, I was at a total loss as to what to cook yesterday. The Band loves Roti's and I try to make it at least once a week. My mum gave me a whole lot of made up roti balls, so all you have to do is take them out of the freezer and once thawed roll them and fry them up on the pan. The rolling is quite a pain - mind you....
Yesterday I made Tortilla's. A bit different to the one blogged here. One can also make this with store bought Tortilla's.
I cut up some chicken fillet into strips and cooked it with some Ina Paarman's Cajun spice, Green Masala, Ghee and some Nando's Garlic peri peri sauce. While this was getting done - I had to roll out the roti's and fry them on a really hot pan. I made mini rotis for this dish.
Once rotis are done spread some Nando's Perinnaise on the bottom of the roti. Place chicken strips along the centre, add some cheese and a freshly made salad. I splashed on some salad dressing for some extra flavour. Roll roti and pin together with a toothpick. Alternatively you can roll it in foil and heat in oven again but since I had just made everything it was all still hot....
The Band was full of Smiles and that's all that counts right - :)

Roast Chicken

Being a working wife, one is always looking out for easy to do meals, that are not only healthy but yummy as well. Who wants to eat boring food when there is so much out there.....





I have these really baby chickens in my freezer and decided that a roast chicken would be perfect.... Besides there are only 2 of us so 1 chicken is just perfect....

Marinade for chicken:
Salt
Red Ginger Garlic Masala
Turmeric or Arad
Fine Dhania Jeeru
Mustard powder
Lemon juice.
Cinnamon sticks
2 Elachi pods

Throw all spices into a pan and heat on stove. Once the spices are cooked, add a tin of tomato paste and cook for a little while longer.

Marinade chicken with above mixture and leave in fridge.
When ready to cook - cook on medium heat with some oil. Turn once over and let get done.

I served this with Mccain French Stir Fry Vegetables sauteed in butter and some Roast Potatoes....

Hmmm Yummy. There was nothing left.

Food Blogging

Hmmmm - I have been away for a long time.... However my interest in food and blogging in particular has not waned and constantly still lurk around all my favourites in the right hand column. I think I will probably be updating this blog more often, because now I cook my own food. Yes I got married and have entered into domesticity as any Indian wife. LOL....

I live very close to mum, so she often helps me out but most of the time it's just me trying to impress the husband (band) with something appetizing and palleatable. So far he has been impressed - so I'm smiling....

Initially I really struggled with deciding what to make, but now I have a routine and will work out a menu for the week on a weekend. In this way I know what ingredients I need and when I get home after a long day at the office, its all there ready to be made.
